Ingredients :
- 4 potatoes, scrubbed
- 8 bacon slices
- 4 tbsp unsalted butter
- 2 garlic cloves, minced
- 1/4 cup yellow onion
- 1/3 cup all-purpose flour
- 2 cups low fat milk
- 1 cup half and half
- 2 cups chicken stock
- 1 tsp salt, plus more to taste
- 1/2 tsp garlic salt, plus more to taste
- 1/2 tsp black pepper
- 1 cup mild cheddar cheese
- 1 cup sharp cheddar cheese
- 1 cup sour cream
- fresh chives, for garnish
Instructions :
1. After giving the potatoes many fork piercings, microwave them for 12 to 15 minutes, or until they are soft. Cut the potatoes in half, then let them cool. Remove the skins when they are cold enough to handle, then chop them into pieces.
2. In the meantime, fry the bacon until crisp in a skillet over medium-high heat. Transfer to a dish covered with paper towels to cool and drain. Only 1 tablespoon of the bacon fat should be saved, the rest should be discarded. Crumble the bacon into little pieces after it has cooled.
3. Melt the butter in a large pot over a low heat. Once the onions are soft, add the reserved bacon fat, garlic, and onions and simmer for an additional 2 to 3 minutes. Stir for one to two minutes while gradually whisking the flour into the pan. Add the milk and half-and-half while whisking slowly. Whisk continuously until smooth. Add the chicken stock little by little. Stir add the kosher salt, garlic salt, and pepper after bringing to a gentle simmer. Maintain a light simmer for 5 to 7 minutes, or until the mixture has slightly thickened.
4. Reserve 1/4 cup of each cheese and the bacon if you want to use it as a garnish. Add the remaining cheeses, bacon, and sour cream after that. Take the pot off the stove. Depending on your preference, cut the potato chunks into smaller pieces or leave them whole when adding them to the pan. Serve hot with your preferred toppings, such as cheese, bacon, and chives.

Notes : You can bake your potatoes in the oven if you'd like. Bake the potatoes on the rack for 45 minutes, or until they are tender to the fork, in a 350°F oven.
